I've never made seitan by the bo...Looks great! I've never made seitan by the boiling method. I generally do some theme on the "sausages" from www.everydaydish.tv . Not traditional, but probably easier. My other favorite seitan recipe is "Bryanna's seitan turkey," which works well for slicing. If you can't find this google searching (my old link doesn't work; I think she took the recipe down), I downloaded a text file I can give you.
